WINE-GROWING METHOD: rows with rammed cordon.

GRAPE HARVEST: from the end of September with grapes harvested by hand after a careful selection of the bunches.
WINE-MAKING: destemming and soft crushing, with a prolonged cold maceration of the skins (10 ° C for 12/16 hours), fermentation in steel on the fine lees for 4/6 months, use of only native yeasts.
AGING AND REFINING: aging in steel for 4/6 months, 4 months in tonneau from lt. 500 and additional 6/8 months in bottle.
COLOUR: straw yellow with golden highlights, bright.
SMELL: powerful, intense and bewitching in the elderberry and acacia notes that embrace intense notes of peach, lemon jam, vanilla, ginger anf toffee to give a complex whole.
TASTE: soft and savory tasting, roboante, pleasant, stuctured but always fresh.
PERSISTENCE: very persistent in aromatic returns.
SERVE WITH: medium-size first courses, white meats, baked fish and cheeses.
