GEOGRAPHICAL POSITION OF THE GRAPES: volcanic hills south of the capital.

NAME OF THE VINEYARD: Vallechiesa.

SOIL: Volcanic.

EXPOSURE: South.

WINE-GROWING METHOD: guyot.

YIELD PER HECTARE: 8 tons.

GRAPE HARVEST: selected grapes where the best grapes are chosen, in the first decade of October.

WINE-MAKING: light pressing and integral fermentation of the grapes with peels and stalks for 8/10 days at room temperature.

AGING: complete maturation on indigenous yeasts for about 4 months, manual decantation.

COLOUR: amber with golden reflections.

SMELL: mediterranean and floreal.

TASTE: full, dry, of excellent structure and flavor.

PERSISTENCE: quite persistent.

SERVE WITH: first courses of medium structure, white meats, herbal cheeses and medium-aged.

BOTTLE: 0,75 l.
